What I eat, in pictures


I thought I’d share pictures of the food I’m eating in my new diet for those who are interested, and also to help me keep track. Below each picture is a description of the meal. Hope the pictures look as tasty as the food is! It still seems like a lot of food to me, but I am willing to give it a try.

Breakfast:  One egg scrambled and cooked in a mug in the microwave.  One slice of toast with half a medium avocado sliced on top.

Lunch:  Two slices of bread, each with 2 tablespoons hummus, some sprouts, and some cherry tomatoes on the side.  Two servings of grapes (I eat them out of the bag).

Dinner option 1: Chicken thigh (skinless), quinoa, peas, and spaghetti squash. A side salad with avocado ranch dressing. 3/4 of a bottle of kombucha to drink.
Dinner option 2: Vegetable curry containing mixed vegetables, beans, coconut milk, and curry paste on quinoa. A side salad with chipotle ranch dressing. 3/4 of a bottle of kombucha to drink.
Dessert:  Four or five dates (there are five in this picture!).

Before bed snack:  Plain whole milk yogurt with some maple syrup.
