Maple glazed carrots with warm spices

1 lb (4 cups) baby carrots or chopped carrots

1/2 c water

1 tsp cinnamon (I put a little more)

3/4 tsp ginger

2 Tbsp maple syrup

1 Tbsp coconut oil

salt to taste

Mix carrots, water, cinnamon, and ginger in a large pan. Put over high heat for 6 minutes, covered, until almost tender.

Add maple syrup, coconut oil, and salt. Cook uncovered over high heat 2-3 minutes, stirring occasionally.
