Sausage, egg, and sweet potato casserole


This dish is intended as a breakfast dish, but it works great for dinner, too! It is also pretty easy if you have a food processor to shred the sweet potatoes.

It is slightly spicy, a little sweet from the sweet potatoes, and filling.

There’s a picture below, and below that I’ll write down the recipe. The casserole is orange in color with brown sausage bits, green parsley, and some white cooked egg white on top.

1 lb hot ground pork sausage (I like Neese’s)

2 Tbsp olive oil

2/3 lbs shredded sweet potato

6 eggs

2 Tbsp parsley

salt and pepper to taste

Preheat oven to 350 F

Heat half the olive oil over medium heat and cook sausage

Remove sausage, leaving drippings in pan

Add rest of olive oil and sweet potatoes and cook 3-5 min

Season with salt and pepper

Add sausage back into pan and stir to combine.

Place sausage and sweet potato mixture in a greased 9×13 casserole dish

Whisk eggs, then add parsley, salt, and pepper

Pour over sausage mixture

Bake for 35-40 min
