Paleo cashew bread 1


I just made a really really simple and very tasty paleo bread that uses cashews and a touch of coconut flour. I got the recipe from https://www.laurafuentes.com/paleo-bread-for-sandwiches/. Below are a couple of pictures of the bread, which is a smaller loaf, brown and very shiny. Below that is the recipe.

In the recipe notes on the original page, they said you could use walnuts instead of cashews for more of a “whole wheat” taste.

5 eggs

2 cups cashews

2 Tbsp coconut oil, melted

2 Tbsp coconut flour

1 tsp baking soda

1/4 tsp salt

1 Tbsp honey

1 Tbsp apple cider vinegar

Preheat oven to 350 F. Grease a 7×3 loaf pan.

In a food processor or blender, blend eggs, cashews, coconut oil, coconut flour, baking soda, salt, and honey for 45 sec to a minute to make a thick smooth batter.

Add apple cider vinegar, blend for 10 seconds, and immediately transfer batter to the pan.

Bake 25 min, then tent with foil and bake another 20 min.

Remove from oven and cool in pan.
