Roasted sausage and veggies


I made the BEST meal last night! Wow, this recipe is a keeper! It is roasted sausage, potatoes, mushrooms, peppers, and onion. Super easy to make, too! I adapted it from the recipe at the following link, my recipe is below the link. Below that is a picture of the yumminess.

1 Tbsp olive oil

1 clove minced garlic

1 tsp rosemary

1 tsp thyme

1 tsp savory

salt and pepper to taste

4 medium potatoes, chopped

1 lb sausage meat (I prefer hot sausage meat, you could also used bratwurst or another prepared sausage sliced)

2 large bell peppers cut in strips

2 medium onions cut in strips

1 lb mushrooms sliced

4 oz shredded mozarella (cheddar or another cheese would work well, too– I used dairy free cheese)

Preheat oven to 400 F.

Combine oil and spices with potatoes in a very large roasting pan, or one 9×13 dish and one smaller casserole dish. (I didn’t know how big it would be and had to grab another dish!)

Roll sausage meat into balls and mix with potatoes.

Roast for 30 min, stirring once.

Add rest of veggies and roast 45 min more or until potatoes are brown, stirring every 15 min. I had to add an extra 15 minutes.

Sprinkle with cheese, return to oven to brown the cheese.

Devour with gusto!
