Strawberry coconut muffins- gluten free and naturally sweetened 2


Gluten free, naturally sweetened strawberry coconut muffins are awesome! I’ve been perfecting this recipe lately and I think I got it down! These are loaded with strawberries and since they are made with coconut flour, coconut sugar (no cane sugar), and coconut oil, they have a really nice coconut taste. Brad and I really like them!

INGREDIENTS:

3 cups strawberries, sliced

2/3 cups coconut sugar

1/3 cup coconut oil, melted

4 eggs

1/2 teaspoon vanilla

1/2 cup coconut flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

DIRECTIONS:

Preheat oven to 425

Grease muffin tin

Stir together strawberries, sugar, oil, vanilla, and eggs

Stir in other ingredients

Spoon into muffin cups

Bake 15 min

Let cool 10 min before removing

Brown muffins with red strawberries bursting out of the top.
