Pumpkin sausage soup


Another 5 star recipe!!! This soup is sooooooooo good! So savory and tasty, and easy to make, too.

I got the recipe from https://www.food.com/recipe/low-carb-pumpkin-sausage-soup-106467. I added some cayenne pepper and used almond milk for the cream and water. Otherwise made as directed. Yummmmm!

2 packages of sausage (I recommend hot)

1 c onion, diced

2 tsp garlic

2 Tbsp Italian seasoning

Pinch of cayenne

4 c sliced mushrooms

2 (15 oz) cans pumpkin

8 c broth

2 c almond milk

Salt and pepper to taste

Brown sausage in stockpot, then drain grease

Add onion, garlic, mushrooms, and spices and saute until cooked

Add pumpkin and mix well

Add broth and simmer 20 min

Add milk and simmer 10 min

Salt and pepper to taste
