Honey glazed carrots and parsnips

For our veggie for dinner tonight I made honey glazed carrots and parsnips, and they are sooooooooo tasty! I love parsnips! They are savory sweet and super yummy.

The picture below shows orange carrots, yellow parsnips, and clear onions in a pot. Below the picture is the recipe. I added more honey, and would add even more next time, so the recipe below reflects that range.

1 cup veggie broth

1 lb carrots, cut in 1/4 inch pieces

1 lb parsnips, peeled and cut in 1/4 inch pieces

1 Tbsp olive oil

1 small onion, sliced thinly

1-2 Tbsp honey

salt and pepper to taste

Bring vegetable broth to a boil, then add carrots and parsnips and cook 10-15 min

Drain and set aside

Cook onion in olive oil until translucent

Add honey, parsnips, and carrots and cook for 2 minutes

Season with salt and pepper
